Our favorite thing to do on the 4th of July is head to our local state park where they have a huge fireworks show. Once you get in there you are stuck until the end of the show, so this year we are going to pack a picnic and make a whole day of it. These will definitely be on my list of things to bring.
4th of July Cupcakes
Here’s what you’ll need to make the cupcakes-
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 1 1/2 tsp white vinegar
- 1 1/2 tbsp red food coloring
- 1 tsp vanilla extract
Then, the frosting-
- 8 oz cream cheese
- 1/2 cup butter
- 2 tsp vanilla
- 3 1/2 cups powdered sugar
Finally, you’ll need these red, white, and blue star sprinkles to top them.
Here’s how to make them-
- Preheat your oven to 350 degrees and line a muffin tin with blue cupcake liners.
- In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
- In a separate bowl, mix together oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
- Slowly add the dry ingredients to the wet ingredients, mixing well until combined.
- Fill cupcake liners ⅔ full.
- Bake for 18-20 minutes.
- Meanwhile, in a large bowl mix together cream cheese, butter, and vanilla.
- Slowly mix in powdered sugar until ingredients are combined and frosting is formed.
- Allow the cupcakes to cool completely before frosting.
- Add the frosting to your cake decorator or piping bag with an icing tip, and frost the cupcakes.
- Finish with patriotic red, white, and blue star sprinkles. Enjoy!
These cupcakes use my favorite, ever cream cheese frosting recipe. I typically use this frosting for every cupcake that I make unless I’m going for a specific, different frosting flavor. It is always a winner, and my family loves it.
