Pumpkin Whoopie Pies with Maple Cream Cheese Filling

I love making easy pumpkin cake mix cookies, and I recently decided to try my hand at some pumpkin whoopie pies. The whoopie pie cookies are a little different than most, you need just two ingredients to make them. Then, this is my usual maple cream cheese frosting that we are a wee bit obsessed with in the Fall. So, add some fun pumpkin sprinkles and you’ve got yourself some yummy Pumpkin Whoopie Pies!

Pumpkin Whoopie Pie Ingredients

Okay, so for these pumpkin cookies to sandwich your frosting with, you need just two things-

Then, for the maple cream cheese filling you’ll need-

  • 8 oz. cream cheese
  • 1/2 cup butter
  • 1 tsp vanilla
  • 4 tbsp maple syrup
  • 3 cups powdered sugar

How to make Cookies & Filling

For the cookies-

  • Preheat the oven to 350 degrees.
  • Line a baking sheet with foil and spray lightly with non-stick cooking spray.
  • In a large bowl, mix cake mix and pumpkin together.
  • Place your cookies on the sheet in rounded spoon fulls, about 2 inches apart (These cookies do not spread hardly at all so make sure you have the cookie shape you are wanting before they go into the oven. I like to use a cookie scoop and give them a little pat to flatten them slightly with the back of the scoop.)
  • Bake at 350 degrees for 13-15 minutes, until cookies are set.

Keep in mind, half of your cookies is how many sandwiches you can make. This batter makes 18-24 cookies, depending on size, for 9-12 cookie sandwiches.

While the cookies are baking, make your filling.

  • In a large bowl, mix butter until light and fluffy.
  • Add in cream cheese, and repeat.
  • Add vanilla, maple syrup, and powdered sugar.
  • Mix well until frosting forms and is smooth.

Once your cookies have cooled, you are ready to make your sandwiches. I use this cake decorator to pipe frosting on all my cakes and cookies. To make the sandwiches, flip one cookie upside down, frost, then add another cookie on top. You can also add fun Fall sprinkles (optional).

  • One box of spice cake mix
  • One 15 oz. can of pumpkin puree (this is pumpkin, NOT pumpkin pie filling)
  • 8 oz. cream cheese

  • 3 cups powdered sugar
