Start by gathering your ingredients. Here’s what you’ll need-

For the cobbler-

  • 1 ¼ cup flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup sugar
  • 2 tsp pumpkin pie spice
  • ½ cup pumpkin puree
  • ¼ cup milk
  • ¼ cup butter, melted
  • 1 tsp vanilla

Then, for the topping-

  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup chopped pecans
  • 1 ½ cups hot water

Let’s make some cobbler-

  1. Preheat your oven to 350 degrees, and spray a 9×9 baking dish with non-stick cooking spray.
  2. In a large bowl, whisk together flour, baking powder, salt, sugar, and pumpkin pie spice.
  3. In a separate bowl, whisk together pumpkin puree, milk, melted butter, and vanilla. Pour the wet ingredients into the dry, mixing until just combined.
  4. Spread dough into the bottom of your 9×9 pan.
  5. In another bowl, stir together topping- brown sugar, sugar, and chopped pecans.
  6. Sprinkle evenly over the dough. Pour the hot water over the topping.
  7. Bake for 40 minutes, until the middle of the cobbler is cakey.
  8. There will be a lot of delicious sauce in the bottom of your cobbler when cooking is finished.
  9. Serve with ice cream and pour the sauce over top. Enjoy!
