Mornings around here are hectic, and it is so important to get the day off on the right foot. I feel like our mornings really set the tone for the rest of the day. I always try to get started with a good breakfast, and of course my morning coffee!
One of my favorite super easy recipes is my Oat & Chcocolate Breakfast Cookies!
They’re so super simple- only 5 ingredients.
-3 medium bananas, mashed
-2 cups Old Fashioned Oats
– 2/3 cup of dark chocolate chips
-2/3 cup of chopped almonds OR almond slivers
My husband loves the almond slivers because they get nice and crunchy!
-1 tbsp. honey
To make these cookies-
Preheat your oven to 350 degrees
Mix all the ingredients together in a bowl.
Roll the cookies into 2 inch balls, and flatten them slightly to form your desired cookie shape.
Bake for 10-12 minutes
This recipe makes 12-14 cookies!
Yum! The thing I love about recipes with such great, clean ingredients- you can see everything in the cookie even after they’re done baking. I love the energy these give me and how they help me start my day right. The oats, almonds, and chocolate make these just perfect.
You could even make these cookies ahead of time for the week and store them in a plastic bag in your refrigerator!
I also like to make my coffee the best it can be by using the new International Delight Simply Pure creamer!
