Hey guys! Today I’m sharing how I prep my freezer breakfast burritos, the recipe I use, and how I make food prep cleanup a breeze with Scotch-Brite® Scrub Dots!
These burritos are so yummy, and so handy to have ready to go in the freezer. All you have to do is pop them in the microwave and they are ready to eat. Breakfast can be difficult as a busy mom, so having something that I can heat up quickly and still get a decent breakfast helps a ton.
Here’s what you’ll need to make them-
- One pack of tortillas (8-10)
- One dozen eggs
- 15-20 slices of bacon, cooked & chopped (or use 1 lb sausage, cooked and crumbled)
- 1 – 1 1/2 cups shredded cheese
- salt and pepper
- a splash of milk
First you’ll want to whisk up your eggs. I like to add salt and pepper, plus a splash of milk makes them fluffy.
Cook and scramble those.
Once your eggs are ready you can assemble your burritos! I like to prep ahead and layer a piece of wax or parchment paper between each tortilla, it just makes the whole process easier.
Add your ingredients to the tortilla and get ready to roll the perfect burrito.
I start by folding over the side closest to me, then folding over the sides. Finally, I roll it up. Burritos can be tricky when it comes to rolling them up, but this method works great to keep the filling inside and they stay rolled well through freezing and reheating. I wrap my wax paper the same way. You can also wrap them in foil, but I’ve found it isn’t necessary. I store these in a gallon storage bag and throw them into the freezer or refrigerator. Keep in mind they need to thaw in the refrigerator for about 24 hours from frozen or you may get cold pockets.
There you have it, delicious freezer burritos, and a quick and easy breakfast solution that is ready to go throughout the week!
Now, my least favorite part about meal prepping is the cleanup, but I always try to wash my dishes once I’m done because all those bowls and pans can really crowd out the sink and the dishwasher, so taking care of them just makes life easier.

- 10 tortillas
- 12 eggs
- 1 1/2 cups shredded cheese
