Lemon Blueberry Popsicles

Summer is basically here, especially if you live in the South like me, we floated right on past Spring. I am a little bit obsessed with making these homemade popsicles, and these lemon blueberry popsicles are delicious.

Lemon Blueberry Homemade Popsicles

I love lemon in the Summertime and these are just perfect. If you are looking for a great popsicle mold, this one has been really great for me. It even includes a fun fold up funnel that you can use to add your ingredients to the molds. I don’t always use the sticks that come with, sometimes I just put jumbo popsicle sticks in there, but the sticks are great, too.

These lemon blueberry popsicles are so easy to make, here’s what you need-

  • 1 1/2 cups vanilla yogurt
  • Juice of 1/2 a lemon
  • Zest of 1 lemon
  • 1/2 cup frozen blueberries

To make them, combine the yogurt, lemon juice, and lemon zest in a medium-sized bowl and mix well.

Add a few tbsp of the yogurt mixture to your molds.

Add a few blueberries, and repeat until your molds are full.

I usually leave mine in the freezer overnight and they are ready to go. To remove your popsicles from the molds, you’ll just run the mold under some hot water for a few minutes and they slide right out.

Bonus points for these is that my kids just love popsicles, so it is easy to sneak in some fruit and vegetable servings into popsicles and they will gobble them right up.
