Pumpkin Cupcakes with Maple Cream Cheese Frosting

I am so excited to share today’s post. I have been working on so many fun recipes for Fall, and these were delicious AND fun to make! This recipe is for my Pumpkin Cupcakes with Maple Cream Cheese Frosting! So many yummy Fall flavors in one little cupcake, plus I’ve topped them with cute little mallowcreme pumpkins!

Pumpkin Cupcakes with Maple Cream Cheese Frosting

These cupcakes are moist, and the icing isn’t too sweet, it’s perfect!

Here’s how to make them-
Ingredients:
One box of your favorite yellow cake mix, plus ingredients on the back of the box
1 tsp. pumpkin pie spice
1/2 tsp. vanilla
1 can pumpkin puree

Directions:
Preheat oven to 350 degrees.
Combine ingredients from the back of the yellow cake mix box, minus any water. Add pumpkin pie spice, vanilla, and pumpkin puree (instead of water).

Mix well with your mixer on medium speed for 2-3 minutes.

Place cupcake liners into a muffin tin. Fill cupcake liners 2/3 full.

Bake 15-17 minutes.

Be sure to let your cupcakes cool before you frost them! These cupcakes were so simple, throwing everything into the bowl and mixing them up, the yellow cake mix really makes this recipe fool proof.

Next, you’ll want to whip up this Maple Cream Cheese Frosting. Here’s what you’ll need-

Ingredients:
2 cups powdered sugar
1/2 cup butter, room temperature
8 oz. cream cheese, room temperature
4 tbsp. pure maple syrup
1/2 tsp. vanilla

To make it, beat the butter with your mixer, until smooth. Add cream cheese, beat until combined. Add powdered sugar, syrup, and vanilla, beat until smooth. Be careful not to over mix.

Finally, top with a mallowcreme pumpkin candy.

These pumpkin cupcakes are seriously amazing, I have never had cupcakes this soft. I know that the pumpkin puree really made these work. I think they are definitely going to be on my list to bring for Thanksgiving dinner! I bet they would also be fun for a Halloween party, too, or maybe for a fun snack after the Pumpkin Patch!

    8. Add powdered sugar, syrup, and vanilla, beat until smooth. Be careful not to over mix.
    9. Allow cupcakes to cool completely, then frost.
    10. Top with a mallowcreme pumpkin.
