Sweet Potato Bites with Goat Cheese, Maple, and Pecan

The best part about holiday entertaining is all of the delicious food. We spend a lot of time thinking about the turkey or ham when it comes to holiday food, but today I’m sharing a delicious appetizer idea that will be perfect for your holiday party. I whipped up these Sweet Potato and Goat Cheese bites, and topped them with toasted pecans and pure maple syrup for a delicious appetizer that has some pretty great flavor combinations.

How to Make Sweet Potato Bites

Here’s what you’ll need to make these-

  • 2-3 sweet potatoes, peeled and sliced into 1/4 inch slices
  • 1/4 cup chopped pecans, toasted
  • 1/4 cup pure maple syrup
  • 3-4 tbsp olive oil
  • 2 tsp cinnamon
  • 4 oz goat cheese
  • 2 tbsp milk
  • Notable Chardonnay to pair with these delicious little bites 😉
Sweet Potato Bites with Goat Cheese, Maple, and Pecan

To make them, preheat your oven to 425 degrees and spray a large rimmed cookie sheet with cooking spray. In a large bowl, toss potato slices in olive oil and cinnamon to coat. Then, lay them down in a single layer. Pop them into the oven and bake for 8 minutes. Take them out, flip them all, and put them back into the oven for another 8 minutes. Meanwhile, whip the goat cheese and milk in a medium bowl until fluffy.

Once the potato slices are baked, spread about a tsp of the goat cheese mixture onto each one. Top with toasted, chopped pecans, and then drizzle with maple syrup. Enjoy!
