Easy One Pot Lasagna Soup

Ingredients

  • 1 lb. ground beef
  • ½ medium yellow onion diced
  • 4 cloves of garlic pressed
  • ½ tsp crushed red pepper
  • 24 oz. jar of pasta sauce
  • 8 cups chicken broth
  • 14 oz. can of crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp. Italian seasoning
  • 2 tsp dried parsley
  • ½ tsp salt
  • ½ tsp pepper
  • 1 bay leaf
  • 10 uncooked lasagna noodles broken into 1-inch pieces
  • ½ cup heavy cream
  • Shredded mozzarella cheese for garnish
  • Ricotta cheese for garnish
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown ground beef over medium heat.

  2. Once browned, add in onion, garlic, and crushed red pepper. Cook 2-3 minutes more, until onion begins to soften.
  3. Drain the excess grease from the ground beef mixture.
  4. Next, add pasta sauce, chicken broth, crushed tomatoes, tomato paste, seasonings, and uncooked lasagna noodles to the pot.
  5. Bring soup to a boil, then simmer 20-25 minutes, until lasagna noodles are tender, stirring occasionally.
  6. Once finished, discard bay leaf and stir in heavy cream.
  7. Serve hot, garnished with shredded mozzarella, ricotta cheese, and fresh parsley.
