To make these pecans, start by combining the pecan halves, brown sugar, white sugar, and cinnamon in a bowl.
Mix to coat the pecans in the sugar and cinnamon.
In a large bowl, combine the egg white, vanilla, and whisk together until well combined.
Add the sugar covered pecans to the bowl and toss to coat.
Be sure to coat your crockpot well with non-stick cooking spray.
Toss the pecans into your crockpot, and cook on low for 2 hours, stirring every 30 minutes.
Add water to the crockpot and stir the pecans well.
Cook one more hour on low, stirring once in between.
Cover a cookie sheet with a sheet of parchment paper, and once the pecans have finished cooking, lay them out to dry for about an hour.
Enjoy, and store in a ziploc bag or other airtight container.
