This Hawaiian Mimosa is a tropical brunch cocktail made with pineapple juice, coconut rum, prosecco, and grenadine for a gorgeous layered sunset effect. It’s fruity, refreshing, and perfect for Summer brunches, beach parties, and girls’ weekends. It is sweet and refreshing, and the perfect brunch- or anytime- drink! This easy cocktail recipe has just four ingredients.

What is a Hawaiian Mimosa?
A Hawaiian Mimosa is typically made with champagne or prosecco (sparkling wine), pineapple juice, grenadine, and a splash of coconut flavored rum, too, making for a strong, but delicious Summertime drink.
Ingredients
- Prosecco or champagne
- Coconut Rum- like Malibu!
- Pineapple Juice
- Grenadine
- Garnishes of your choice- pineapple, maraschino cherries, etc..

Instructions
Step 1: To a champagne flute, add pineapple juice, coconut rum, and prosecco.



Step 2: Finish with a slow poured splash of grenadine.

Step 3: Garnish with a pineapple wedge or maraschino cherry.

Champagne vs. Sparkling Wine
You can opt to use either champagne or sparkling wine for mimosas. When it comes to choosing between them, they are the same, but here’s why they’re called different things. All champagne is sparkling wine, but not all sparkling wine is champagne. Specifically, it can’t be labeled as champagne, unless it comes from the Champagne region of France.
Champagne is typically associated with luxury and celebration, while sparkling wine is more versatile and can be enjoyed in a variety of settings. We make the fun layers in this mimosa by carefully, slowly adding just a splash of grenadine. It is denser than the cocktail, so it sinks to the bottom. You can pour it off the back of a spoon, but I find these layers are really simple to make just by slowly adding the grenadine to the glass. Once you stir it up or start sipping, the layers will mix together for a more orange drink when the pineapple juice and grenadine mix.

How to Make a Pitcher of Hawaiian Mimosas
To mix up a big batch of these mimosas in a pitcher, combine 750 ml prosecco, 3/4-1 cup coconut rum, and 1 1/2-2 cups pineapple juice. Mix this up for a party in a pitcher, and then just add the splash of grenadine to the individual glasses, so that you still get that layered look. Don’t forget the fresh pineapple or cherries for garnishing each glass.
