We were inspired by our Tipsy Mermaid Cocktail to make this fun Mimosa version with our layers of Midori melon liqueur, pineapple juice, and blue curacao. We are big Mimosa fans and love making fun variations like this one.

Mermaid Mimosa Ingredients:
- 3 ounces champagne
- 1/2 ounce of Midori
- 2 ounces pineapple juice
- 1/2 ounce of blue curaçao
- Fresh pineapple wedge for garnish
- Maraschino cherry for garnish

Typically, champagne is the alcohol most featured in mimosas, though people do like to use Prosecco and Cava as well for another bubbly option. You can even opt for sparkling water or sparkling grape juice for a fun alcohol-free Mimosa. Just be sure your mixers don’t include alcohol, as well. This mimosa would be even more fun with the addition of some coconut rum for even more tropical flavor.
