Tipsy Mermaid Ingredients
- 6 ounces pineapple juice
- 4 ounces white rum
- 4 ounces cream of coconut
- 1 ounce blue curaçao
- 2 ounces midori
- I cup ice, plus enough to fill two tall cocktail glasses
- Maraschino cherries for garnish
- Fresh pineapple slice for garnish
Directions:
Step 1: To your cocktail shaker, add pineapple juice, rum, coconut milk, and 1 cup ice. Shake until well combined and chilled.
Step 2: Fill two cocktail glasses fully with ice cubes.
Step 3: Add about 1 oz. of midori to each glass.
Step 4: Slowly pour the pineapple and rum mixture, strained, evenly into each glass (about 3 oz. each).
Step 5: Top with a splash of blue curacao.
Step 6: Garnish with fresh pineapple and a maraschino cherry.
Give the drink a light stir before enjoying.
Substitutions & Additions
- There is a lot of sweetness in this drink- if you find that it is too sweet to your tastes, you can swap out the cream of coconut to a coconut milk, or look for lower sugar options for that ingredient, as well as the pineapple juice.
- The Midori offers an added flavor bonus to this yummy drink, but if you don’t have it on hand or don’t love the taste, you can still create a fun ombre with the pineapple juice and blue curacao. You won’t get as much of the eye-catching color, but it will resemble a pina colada drink that is just yellow and blue with turquoise color when it mixes!
- You could even opt for spiced rum in this drink for an even more unique flavor.
- The trick to layering the pineapple, blue liqueur, and melon liqueur is the drink being full of ice, firstly. It slows the liquids down when they’re being poured so they don’t mix together so quickly. Then, you can also very slowly pour your ingredients over the back of a spoon for an even more dramatic effect. When layering, just know that the more viscous liquid, usually the one with a higher sugar content, is going to sink to the bottom, so try and get ingredients with different amounts of sugar for the best results.
- You can use other fresh fruit for garnish as well- an orange slice or even fresh lime slices would be delicious.

You, too, can make a beautiful ombre drink by slowly pouring the ingredients in. When it comes to layered cocktails, ingredients higher in sugar will be heavier, and those ingredients should go in first. For this drink, it’s so easy to start with the heavy Midori, then the pineapple juice mixture, and then topping the drink with blue curacao for the blue color. You can “bounce” the liquid off of a spoon as well for an even slower pour.

What is the best glass to use for this tipsy mermaid drink?
You can serve this in any cocktail glass you have or prefer, we used these cute beer can glasses to serve ours. They’re great for creating ombre cocktails.
What other garnishes can I try?
You can use any garnishes you love for this drink. We opted for the fresh pineapple to complement the pineapple juice in the drink, and of course we love using maraschino cherries for garnish, but feel free to get creative and use what you love. You could garnish with a lime, or even a piece of honeydew melon.
Can I use other types of rum?
Yes! You could easily swap the white rum for a different flavored rum. Banana rum, coconut rum, or even a citrus or watermelon flavored rum would all be delicious and really set this drink off with a taste of the tropics.
How to Make a Big Batch of this Tipsy Mermaid Punch-
To serve 12 people, in a large pitcher or a large punch bowl, stir together 36 ounces pineapple juice, 750 ml rum, 20 ounces of cream of coconut. To serve, fill the cocktail glasses with ice, add 1 ounce Midori, fill with the pineapple punch, and top with a splash of curacao. You don’t have to add ice to the pitcher or bowl unless you want to, there is always a chance it could water down the ingredient
