Pumpkin Pie Bars
These Pumpkin Pie Bars are a great alternative to traditional pumpkin pie. We made ours with shortbread crust, and they are so easy to whip up for a delicious Thanksgiving dessert.

Ingredients
1 cup all purpose flour
1/3 cup powdered sugar
1/2 cup salted butter, softened
15 oz. pumpkin puree
12 oz. evaporated milk
3/4 cup brown sugar
1 tsp. pumpkin pie spice
1/2 tsp. salt
2 large eggs
Optional, whipped cream for topping
How to Make Them
Step 1: Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 baking dish with parchment paper, and set aside.
Step 2: For the crust, use a fork to combine the all purpose flour, powdered sugar, and softened butter. The ingredients should all be well incorporated, but the mixture will be crumbly.
Step 3: Press this mixture into the parchment lined pan, and bake for 15 min.
Step 4: Allow the crust to cool.
Step 5: For the pie, add the eggs to a large mixing bowl and lightly beat the eggs.
Step 6: Add the pumpkin puree, evaporated milk, brown sugar, pumpkin pie spice, and salt.
Step 7: Whisk until well combined.
Step 8: Pour the pumpkin pie filling over the cooled pie crust.
Step 9: Bake the pumpkin bars for 50-55 minutes.
Step 10: Allow the bars to cool completely, and slice. Or, let them chill in the refrigerator until ready to serve. Top with whipped cream, if desired.
Can I make pumpkin pie bars with a graham cracker crust?
Absolutely! If you have a graham cracker crust or other traditional pie crust you prefer, you can make it in the bottom of your pan instead.
Can I make pumpkin bars ahead of time?
Of course! These are perfect for making the day before Thanksgiving. After baking, just cover with plastic wrap and let them chill in the refrigerator until you are ready to serve them. I’d also take them out of the refrigerator about 30 minutes or so before serving.
