Ingredients You’ll Need
You only need a few simple ingredients to make this easy Grinch cake!
For the Cake
- White cake mix: One standard box of white cake mix makes the base of our Grinch cake.
- Ingredients listed on the cake mix box: You’ll need the water, oil, and eggs called for on your particular box of cake mix.
- Neon green gel food coloring: This gives our cake its signature bright Grinch green color. Gel food coloring works especially well because it creates a vibrant color without adding too much extra liquid.
For the Red Cheesecake Pudding Filling
- Cheesecake instant pudding mix: One 3.4-ounce box adds a delicious cheesecake flavor to the filling.
- Milk: Two cups of milk are used to prepare the pudding.
- Red gel food coloring: This turns our cheesecake pudding bright red for a fun surprise inside the green cake.
For the Green Buttercream Frosting
- Unsalted butter: One cup of softened butter creates the rich, creamy base for our homemade frosting.
- Powdered sugar: You’ll need approximately 4–5 cups to sweeten and thicken the buttercream.
- Whole milk: Up to 2 tablespoons help bring the frosting to the perfect consistency.
- Vanilla extract: Two teaspoons add delicious vanilla flavor.
- Neon green gel food coloring: We’re using more green food coloring to make our frosting match the cake.
- Green sprinkles: These add a little extra sparkle and festive color.
- Jumbo heart sprinkles: The red hearts are the perfect finishing touch for this Grinch-inspired Christmas dessert!

How to Make Grinch Poke Cake
This cake comes together in three easy parts: baking the green cake, adding the red pudding filling, and making the homemade buttercream frosting.
Step 1: Prepare the Green Cake
Preheat your oven to 350 degrees Fahrenheit and spray a 9×13-inch baking dish with nonstick cooking spray.
In a large mixing bowl, combine the white cake mix with the water, oil, and eggs listed on the back of the box. Whisk everything together until well combined.

Add a generous amount of neon green gel food coloring, mixing until the color is evenly distributed throughout the batter. Continue adding a little more coloring as needed until you have a bright Grinch green shade.

Pour the batter into your prepared baking dish and bake according to the directions on the cake mix box, approximately 25–30 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool completely before moving on to the filling.
Step 2: Poke Holes in the Cake
Once the cake has cooled, use a large straw, the narrow end of a wooden spoon, or another similar utensil to poke holes all over the cake.
Space the holes evenly throughout the cake so that every slice will have some of the delicious cheesecake pudding filling.
Be careful not to poke all the way through the bottom of the cake.

Step 3: Make the Red Cheesecake Pudding
In a medium mixing bowl, whisk together the cheesecake instant pudding mix and 2 cups of milk according to the package directions.
Add red gel food coloring and continue whisking until the pudding reaches your desired shade of bright red.

While the pudding is still soft enough to work with, use a food syringe, turkey baster, or similar kitchen tool to fill the holes in your cake with the red cheesecake pudding.

Transfer the cake to the refrigerator and allow it to chill for at least 30 minutes so the pudding can set.
Step 4: Make the Green Buttercream Frosting
While the cake is chilling, prepare your homemade buttercream.
In a large mixing bowl, beat the softened butter with an electric mixer until smooth and creamy.
Add the vanilla extract, a generous amount of neon green gel food coloring, and approximately half of the powdered sugar. Mix until everything begins to come together.
Gradually add the remaining powdered sugar, alternating with small amounts of milk as needed.
Continue beating until the frosting is smooth, fluffy, and easy to spread. You may not need all of the milk.

If your frosting becomes too thin, add a little extra powdered sugar until it reaches your desired consistency.
Step 5: Frost and Decorate
Once the pudding filling has set, remove the cake from the refrigerator.
Spread the green buttercream frosting evenly over the top of the cake.

Finish with green sprinkles and jumbo red heart sprinkles for that adorable Grinch-inspired look.

Refrigerate the cake until you’re ready to slice, serve, and enjoy!
Tips for the Best Grinch Poke Cake
Use gel food coloring. Gel food coloring gives you the most vibrant green and red colors without significantly changing the consistency of your cake batter, pudding, or frosting.
Let the cake cool completely. If the cake is still warm when you add the pudding, the filling may not set as nicely. Be sure to allow plenty of cooling time before poking the holes.
Make your holes large enough for the filling. Since cheesecake pudding is thicker than some traditional poke cake fillings, you’ll want to make sure the holes are wide enough for the pudding to fit inside.
Work quickly with the pudding. Instant pudding begins thickening shortly after it’s mixed. Fill your cake while the pudding is still soft enough to pipe or squeeze into the holes.
Don’t add all the milk to the frosting at once. Start with a small amount and add more only as needed. You want the frosting to be smooth and spreadable without becoming too runny.
Chill before serving. Refrigerating the finished cake helps the pudding stay set and makes it easier to cut into neat slices.

Fun Variations
Want to switch things up? Here are a few fun ways to customize this Christmas poke cake!
Use vanilla pudding: If cheesecake pudding isn’t your favorite, you can substitute vanilla instant pudding for a more classic flavor.
Try cream cheese frosting: A homemade cream cheese frosting would be delicious with the cheesecake pudding filling.
Add Christmas sprinkles: While we love the green sprinkles and jumbo red hearts, you can also use a festive Christmas sprinkle mix.
Make it extra festive: Add a few red and green candies to the top for even more Christmas color.
How to Store Grinch Poke Cake
Because this cake contains cheesecake pudding, it should be stored in the refrigerator.
Cover the baking dish tightly with plastic wrap or transfer leftover slices to an airtight container. Store in the refrigerator for up to 3–4 days.
For the best flavor and texture, you can let individual slices sit at room temperature for about 10–15 minutes before serving so the buttercream has a chance to soften slightly.

Can You Make This Cake Ahead of Time?
Yes! This is a great make-ahead Christmas dessert.
You can prepare the cake and pudding filling the day before your holiday party, then refrigerate it overnight.
Add the homemade buttercream frosting and sprinkles the following day, or decorate the entire cake ahead of time and keep it covered in the refrigerator until you’re ready to serve.
If you’re using sprinkles that tend to bleed color, wait until shortly before serving to add those finishing touches.
Frequently Asked Questions
What is a poke cake?
A poke cake is a cake that has holes poked throughout it after baking. A filling, such as pudding, gelatin, or sweetened condensed milk, is then added to the holes. This creates little pockets of extra flavor and moisture throughout the cake.
Can I use a different cake mix?
Yes! While white cake mix works best for achieving a bright green color, you could also use yellow cake mix. Just keep in mind that the yellow color may slightly affect the final shade of green.
Can I use liquid food coloring instead of gel?
You can, but gel food coloring is recommended for the most vibrant colors. Liquid food coloring may require a larger amount and can affect the consistency of the frosting.
Do I have to use a food syringe for the filling?
No! A food syringe makes it easier to get the pudding directly into the holes, but a turkey baster or piping bag with a suitable opening can also work.
Does Grinch Poke Cake need to be refrigerated?
Yes. Since this recipe contains cheesecake pudding made with milk, it needs to be refrigerated. Keep it chilled until you’re ready to serve.
