Christmas Poke Cake

This recipe is a fun Christmas spin on a traditional jello poke cake. We took white cake mix, with green and red jello throughout, and topped it with frosting and festive Christmas sprinkles. If you are looking for a unique, easy recipe that the whole family will love, our Christmas Poke Cake is just what you need.

It doesn’t get any easier than this simple Christmas dessert idea. We love taking boxed cake mixes and other store bought ingredients and really upleveling them into a fun dessert to share with family and friends. Poke cakes have been around forever, and we love how customizable they are for any occasion.

Christmas Poke Cake Ingredients:

  • 1 box white cake mix + the ingredients on the back (water, oil, eggs)
  • 1 (3 oz.) box red jello (we used strawberry, you can use cherry or any red color)
  • 1 (3 oz.) box green jello (we used lime)
  • 4 cups water, divided
  • 1 container of store bought white frosting- any flavor you prefer
  • Christmas sprinkles

Directions:

Step 1: Preheat your oven to 350 degrees fahrenheit. Spray a 9×13 inch baking dish with non-stick spray, or line with parchment paper, and set aside.

Step 2: Take a large mixing bowl, and prepare the cake mix, according to the directions on the back of the cake mix box.

Step 3: Pour the cake batter into your prepared baking dish, and bake according to the time noted for a 9×13 pan.

Step 4: After the cake has finished baking, allow it to cool completely. Then, you are ready to poke the holes in your cake. Use a thin wooden spoon handle or a large straw to poke holes throughout the cake. Set the cake aside while we make the jello.

Step 5: For the jello, start by bringing 1 cup of water to a boil. Remove that from the heat, and whisk in the red jello, stirring until dissolved. Add 1 cup cold water, and whisk again. Repeat this for the green jello, as well.

Step 6: Carefully pour the red and green jello into the holes of the cake, we alternated the green and red. I like to do every other hole a different color so you get a variety when you cut your pieces.

Step 7: Cover the cake with foil or plastic wrap, careful not to let the wrap touch the top of the cake. Let the cake chill for at least 6 hours, or over night.

Step 8: After the cake has finished chilling, frost the cake with your frosting you chose, and top with sprinkles.

Tips

  • You can use any homemade white or yellow cake recipe to make this, if you prefer.
  • The same goes for frosting, if you have a homemade frosting recipe you prefer, you can use that over the store bought.

A festive Christmas inspired jello poke cake, our Christmas Poke Cake is made with boxed cake mix and store bought frosting, but with red and green jello throughout, and sprinkles!

Ingredients

Instructions

    1. Preheat your oven to 350 degrees, and spray a 9x13 inch pan with non-stick spray.
    2. In a large mixing bowl, prepare cake mix, according to the box directions.
    3. Pour the batter into your 9x13 inch pan, and bake according to the recommended time on the box.
    4. Allow the cake to cool, then use the end of a wooden spoon or a large straw to poke holes into the cake.
    5. To prepare your jello, bring 1 cup of water to a boil.
    6. Remove from the heat, and whisk in red jello, stirring until dissolved.
    7. Whisk in 1 cup coldwater.
    8. Repeat those steps for the green jello.
    9. Pour the red and green jello into the holes you made into the cake in any pattern you like. I like to do every other hole a different color so you get a variety when you cut your pieces.
    10. Cover the pan with foil or plastic wrap, and move to the refrigerator to chill the cake for at least 6 hours, or overnight.
    11. After the cake has chilled, add the frosting and smooth evenly over the cake, and top with Christmas sprinkles. Enjoy!
