Ingredients You’ll Need
You only need a handful of basic ingredients to make these fun Christmas pancakes.
- 2 cups all-purpose flour– The base of our homemade pancake batter.
- 1/4 cup granulated sugar -Adds just the right amount of sweetness.
- 4 teaspoons baking powder– Helps the pancakes rise and become nice and fluffy.
- 1/4 teaspoon baking soda– Works with the other ingredients to give the pancakes a light texture.
- 1/2 teaspoon salt– Balances out the sweetness and enhances the flavor.
- 1 3/4 cups milk -Adds moisture and brings the pancake batter together.
- 1/4 cup butter– Melted butter adds richness and delicious buttery flavor.
- 2 teaspoons vanilla extract– Gives these pancakes a sweet vanilla flavor.
- 1 large egg– Helps bind the ingredients together.
- Neon green gel food coloring– Gives our Grinch pancakes their signature bright green color.

Optional Toppings
- Whipped cream or Cool Whip
- Jumbo red heart sprinkles
- Maple syrup
- Butter
Tip: I recommend using gel food coloring instead of liquid food coloring. Gel coloring creates a brighter, more vibrant green without adding too much extra liquid to your pancake batter.
How to Make Grinch Pancakes
These homemade Grinch pancakes are super easy to make! Here’s how to put them together.
Step 1: Combine the Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until everything is well combined.

Step 2: Melt the Butter
Add the butter to a microwave-safe bowl and microwave in 30-second increments until melted. Allow the melted butter to cool for about a minute before adding it to the pancake batter.
Step 3: Mix the Wet Ingredients
Make a well in the center of your flour mixture and crack the egg into the middle.
Give the egg a quick whisk, being careful not to mix too much of the flour into it just yet.
Next, add the milk, melted butter, vanilla extract, and about 2 teaspoons of neon green gel food coloring.
Whisk the wet ingredients together briefly, then use a spatula to gently fold everything together until just combined.
Don’t worry if there are still a few lumps in the batter. That’s perfectly normal!

Step 4: Let the Batter Rest
Allow the pancake batter to rest for about 5 minutes.
This gives the flour time to hydrate and helps create those delicious, fluffy pancakes.
Step 5: Cook the Pancakes
Heat a large skillet over medium-high heat and lightly spray with nonstick cooking spray.
Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Depending on the size of your skillet, you may be able to cook several pancakes at once.
Cook for 2-3 minutes, until the edges begin to look fluffy and bubbles form on the surface.
Carefully flip each pancake and cook for another 2-3 minutes, until cooked through.
Repeat with the remaining batter until all of your pancakes are ready.

Step 6: Add the Grinch Toppings
Stack your bright green pancakes onto a plate and add a generous dollop of whipped cream or Cool Whip.
Finish with a jumbo red heart sprinkle for the perfect Grinch-inspired touch!
Serve warm with butter, maple syrup, or your favorite pancake toppings.

Tips for the Best Grinch Pancakes
Don’t overmix the batter. It’s okay to have a few lumps! Overmixing can lead to dense, chewy pancakes instead of light and fluffy ones.
Use gel food coloring. Neon green gel food coloring works best for achieving that signature Grinch-green shade.
Adjust the heat if needed. If your pancakes are browning too quickly, reduce the heat to medium. Cooking them at a slightly lower temperature can also help preserve their bright green color.
Wait for bubbles before flipping. When bubbles start appearing on the surface and the edges look set, your pancakes are ready to flip.
Keep the pancakes warm. If you’re making a big batch, place finished pancakes on a baking sheet in a 200°F oven while you cook the remaining batter.
Add toppings just before serving. Whipped cream and Cool Whip can melt on warm pancakes, so wait until you’re ready to eat before decorating.

Fun Grinch Pancake Topping Ideas
While a little whipped cream and a red candy heart are all you need to make these pancakes look festive, there are plenty of other fun ways to dress them up!
- Red heart sprinkles: The perfect finishing touch inspired by the Grinch’s growing heart.
- Whipped cream: Adds a fluffy white topping that looks adorable against the bright green pancakes.
- Fresh strawberries: Add a pop of red color and a fresh, fruity flavor.
- White chocolate chips: Sprinkle a few over the pancakes for an extra sweet breakfast treat.
- Christmas sprinkles: Use red, green, and white sprinkles for even more holiday fun.
- Powdered sugar: Dust the pancakes lightly for a snowy Christmas morning look.
You could even set up a little Grinch pancake topping bar and let everyone decorate their own stack!
Can You Make Grinch Pancakes Ahead of Time?
Yes! These pancakes are a great option for making ahead, especially if you’re planning a busy Christmas morning breakfast.
Allow the cooked pancakes to cool completely, then store them in an airtight container in the refrigerator for up to 3-4 days.
To reheat, microwave individual pancakes in short intervals until warmed through, or place them in a toaster or skillet.
For the best results, wait to add your whipped cream and heart sprinkles until just before serving.
Can You Freeze Grinch Pancakes?
Absolutely! Homemade pancakes freeze really well.
Let the pancakes cool completely, then arrange them in a single layer on a parchment-lined baking sheet.
Freeze until firm, then transfer them to a freezer-safe bag or airtight container. Place parchment paper between the pancakes if needed to prevent sticking.
Freeze for up to 2 months for the best quality.
When you’re ready to enjoy them, reheat directly from frozen in the microwave, toaster, or oven until heated through.
This is a great way to get ahead on your holiday breakfast preparations!

Frequently Asked Questions
Can I use regular green food coloring?
Yes! Regular liquid green food coloring will work, but you may need more to achieve the same bright green shade. I prefer neon green gel food coloring because it creates a more vibrant color without thinning the batter.
Why aren’t my Grinch pancakes bright green after cooking?
Pancakes naturally brown as they cook, which can make the green color appear darker on the outside. Try reducing your skillet temperature slightly to help keep them looking bright and festive.
Can I use pancake mix instead?
Yes! If you’re short on time, you can prepare your favorite boxed pancake mix according to the package directions and stir in green gel food coloring. Then cook and decorate as usual.
How do I make my pancakes extra fluffy?
The key is to avoid overmixing your batter and allow it to rest for about 5 minutes before cooking. Be sure your baking powder is fresh, too!
What can I use instead of heart sprinkles?
If you can’t find jumbo red heart sprinkles, try using small red heart candies, sliced strawberries cut into heart shapes, or even a few red Christmas sprinkles.
