How to Make Pumpkin Pancakes
Step 1: In a medium mixing bowl, whisk together the flour, baking powder, salt, pumpkin pie spice, and cinnamon. Set the dry ingredients aside.

Step 2: In a separate large mixing bowl, whisk together the brown sugar, granulated sugar, vanilla, pumpkin puree, eggs, melted butter, and milk until everything is well combined.

Step 3: Add the dry ingredients to the wet ingredients. Gently fold everything together until just combined.

Be careful not to overmix your pancake batter. It’s perfectly fine if you can still see some lumps in the batter.
Step 4: Let the pancake batter rest for about 5 minutes. While it rests, heat a skillet or griddle over medium heat.
Lightly coat the cooking surface with a nonstick spray if needed.
Step 5: Pour about 1/3 cup of batter onto the hot skillet or griddle for each pancake.

Step 6: Cook the pancakes for about 4 minutes on the first side, or until the edges begin to set and there are bubbles rising to the top of the pancake.

Step 7: Flip and cook for another few minutes, until the second side is golden and the pancake is cooked through.

Repeat with the remaining batter.
Pumpkin Pancake Toppings
Maple syrup and butter are always delicious, but there are so many fun ways to dress up pumpkin pancakes.
Try topping yours with whipped cream and an extra sprinkle of pumpkin pie spice for a pumpkin pie-inspired breakfast. Chopped pecans or walnuts add a little crunch, while caramel sauce makes them an extra-decadent fall treat, borderlining dessert.
You could also add mini chocolate chips, cinnamon butter, powdered sugar, or even a few candied pecans.
For a fall brunch, set out several toppings and let everyone build their own stack.

Tips for the Best Fluffy Pumpkin Pancakes
The most important tip for fluffy pancakes is don’t overmix the batter. Once you combine the wet and dry ingredients, fold them together just until you don’t see any large streaks of dry flour. Lumps are completely normal.
Letting the batter sit for about five minutes before cooking also gives the baking powder a chance to start working.
You’ll also want to make sure your skillet is hot before adding the first pancake, but avoid getting it too hot. If the outside of your pancake browns before the center has time to cook, lower the heat slightly.
Because pumpkin pancake batter is thicker and more moist than traditional pancake batter, these pancakes may take a little longer to cook through.

Can I Use Pumpkin Pie Filling?
For this recipe you’ll want to use 100% pure pumpkin puree.
Pumpkin pie filling already contains sugar and spices, so using it would change both the sweetness and spice levfel of the finished pancakes. Plus, it’s meant for pie, so the texture would be quite different as well.
Canned pumpkin puree works perfectly, but you can also use homemade pumpkin puree if you have some on hand.
Can You Make Pumpkin Pancakes Ahead of Time?
Yes! These pumpkin pancakes are great for meal prep.
Allow leftover pancakes to cool completely before storing them in an airtight container in the refrigerator. When you’re ready to eat them, reheat the pancakes in the microwave or toaster oven until warmed through.
You can also freeze pumpkin pancakes. Place cooled pancakes in a freezer-safe container or bag with parchment paper between the layers to keep them from sticking together.
Then you can pull out just a few pancakes at a time whenever you need a quick fall breakfast.

Easy Fall Breakfast
These fluffy pumpkin pancakes are such a fun way to bring pumpkin season to the breakfast table. They’re filled with real pumpkin, cinnamon, pumpkin pie spice, and just enough sweetness to make them feel special without turning breakfast into a dessert.
