Champagne Jello Shots (with a Sparkly Twist!)

Ingredients
- 1 1/2 cups champagne (I used Barefoot Moscato, but use your favorite!)
- 1/2 cup vodka
- 1 tbsp. granulated sugar
- 3 envelopes Knox gelatin
- 2 cups Sprite
- Confetti star sprinkles

Directions
Step 1: Bloom the Gelatin
Add Champagne and vodka, to a medium saucepan. Sprinkle gelatin over top. Allow this mixture to set for 5 minutes to bloom the gelatin.
Step 2: Heat & Dissolve
Add sugar, and heat over medium low heat, stirring occasionally, until sugar is dissolved and the mixture is steamy. Don’t let this boil, because the alcohol will cook out quickly if it does.

Step 3: Add Sprite
Remove from the heat, and stir in Sprite. Allow the Jello mix to cool and the carbonation from the soda to disappear completely. This may take several minutes.

Step 4: Pour Into Cups & Chill
Once the foam is gone, pour evenly into 2 oz. Jello cups. Move the cups to the refrigerator to chill for at least 2 hours.


Step 5: Add Sprinkles
Before serving, sprinkle confetti Stars to the tops of the Jello cups. Enjoy!

Tips for Perfect Champagne Jello Shots
- Use sweeter champagne if you prefer dessert style shots.
- Chill before adding sprinkles, so they don’t bleed or sink.
- Serve cold- as they warm up they loose their consistency.
- Make them ahead, even the night before your party, to save time.
