Pumpkin Jello Shots

- Knox unflavored gelatin
- Pumpkin puree

- Whipped cream vodka

- Mellowcreme pumpkin candies

Pumpkin Jello Shots Instructions
Step 1: Place your plastic cups onto a shallow baking pan or cookie sheet. Set aside.
Step 2: In a medium saucepan, add 1 ½ cups cold water and sprinkle over Knox gelatin.
Step 3: Whisk to combine. Heat the gelatin mixture on the stovetop over medium heat until steamy.
Step 4: Whisk in pumpkin puree, sugar, and pumpkin pie spice. Continue stirring until heated through and sugar is dissolved.
Step 5: Remove from the heat and whisk in butterscotch schnapps, whipped cream vodka, and Rumchata.
Step 6: Pour the mixture evenly into 2 oz. cups. Move to the refrigerator to chill for at least 4 hours.
Step 7: Before serving, top each shot with whipped cream and a Mellowcreme pumpkin.
Substitutions
Knox gelatin – if you cannot find Knox brand gelatin, you can use any brand of unflavored gelatin.
Whipped cream vodka – if you do not have whipped cream vodka, you can substitute it with cake vodka or vanilla vodka.
Rumchata – this can be substituted with another cream liqueur, such as Ricura, Somrus, or Ponche Kuba.
Mellowcreme pumpkins – these can be found in the candy aisle of most grocery stores. If you cannot find them, you can use any small, soft candy, like candy corn.
Pumpkin puree – if you do not have pumpkin puree, you can puree fresh pumpkin with a blender or food processor.
Whipped cream – you can use Cool Whip instead of whipped cream. Or make your own with heavy whipping cream.
Variations
Pumpkin Pie Jello Shots – add some graham cracker crumbs and pumpkin pie filling to turn these into pumpkin pie shots.
Rotten Pumpkin Jello Shots – for a spooky twist, add some green food coloring to these jello shots.
Pumpkin Spice Latte Jello Shots – make these even more fall-themed by adding some pumpkin spice coffee creamer to the mix.
Storage
These pumpkin shots are best enjoyed the same day they are made. However, if you need to make them ahead of time, they can be stored in the fridge for up to 2 days. Be sure to keep them in plastic shot glasses with lids or covered in plastic wrap, so they do not dry out.

Ingredients

- ¼ cup pumpkin puree
- ¼ cup sugar
- ½ tsp pumpkin pie spice
- ¼ cup butterscotch schnapps
- ¼ cup whipped cream vodka
- ¼ cup rumchata
- 12 (2 oz.) plastic cups
- Whipped cream for topping
- 12 mellowcreme pumpkin candies
