This 4th of July Cookie Cake is the perfect red white and blue dessert for any patriotic holiday, including Memorial Day! It is a simple chocolate chip cookie cake made with red white and blue sprinkles & red and blue M&M candies.

Ingredients:

  • 1 cup butter, divided
  • ⅔ cup brown sugar
  • ⅓ cup granulated sugar
  • 2 eggs
  • 2 ½  tsp vanilla extract, divided
  • 2 cups all purpose flour
  • 1 tsp. Salt
  • ¾ tsp baking soda
  • ½ cup semi sweet chocolate chips
  • ½ cup red and blue M&Ms
  • 2 cups powdered sugar
  • 1 tbsp. milk
  • 4th of July sprinkles

Directions:

Step 1: Heat oven to 350 degrees fahrenheit. Spray a 10 inch springform pan, or a 10 inch round cake pan with non-stick spray.

Step 2: In a large bowl, beat ½ cup of butter until smooth.

Step 3: Add in brown sugar and sugar, and mix well to combine.

Step 4: Add eggs and 1 ½ tsp. vanilla and mix again.

Step 5: In another medium bowl, whisk together all purpose flour, salt, and baking soda.

Step 6: Slowly add the dry ingredients to the wet ingredients, mixing until just combined.

Step 7: Fold in chocolate chips and M&Ms.

Step 8: Press the cookie dough into the prepared pan evenly.

Step 9: Bake for 20-25 minutes, until golden brown.

Step 10: Allow the cookie cake to cool completely.

Step 11: For the frosting, in a large mixing bowl, beat ½ cup butter, until smooth. Add in powdered sugar, 1 tsp. Vanilla, and milk. Mix until well combined. Add the frosting to a piping bag with a 1M star tip.

Step 12: Pipe frosting around the edge of the top of the cake. Finally, sprinkle with 4th of july sprinkles.

Store any leftovers in an airtight container in the refrigerator. Enjoy!

Substitutions & Tips:

  • You could literally customize this cookie cake for any holiday- simply change out the M&Ms and sprinkles for a whole different custom cake. This would be great for birthday parties, Easter, Halloween, etc..
  • You could add any cookie toppings to this cookie cake base- try swapping the candy & semi sweet chocolate chips with white chocolate chips, crushed oreo cookies, nuts, or any other cookie fillings you like.
  • To make the cookie cake easier to remove from the bottom of the springform pan, line the bottom plate with a piece of parchment paper.

The flavor of cookie cake is a bit different than cookies, just because you have to use the ingredients a bit differently to create this giant cookie. You don’t get as many crunchy edges, but you do get a delicious giant cookie cake.

Does a cookie cake need to be refrigerated?

No, a plain cookie cake does not need to be refrigerated, but our buttercream frosting recipe does need to be, so be sure and store any leftovers in the refrigerator for up to 3 days.
