For as long as I can remember, “Rotel” was the go-to dip for parties, football games, and more. I didn’t even realize until I was an adult that the Rotel was actually just a brand of canned diced tomatoes. Needless to say, we are big fans of this dip, and wanted to share our Rotel Dip Recipe, too. It is such an easy appetizer that you can make on the stove top, in the oven, or even in a slow cooker- which we love to do, since it keeps the dip warm throughout the game, of course. If you want to make Rotel cheese dip for your next gathering, here’s how to do it-

How to Make Rotel Dip on the Stove Top

Step 1: Add the sausage to a large skillet, and brown the sausage over medium high heat, chopping as you go.

Step 2: Drain the sausage, and return it to the pan.

Step 3: Add the drained Rotel, and the Velveeta. For best results, chop the Velveeta into cubes so it melts easier.

Step 4: Cook, over medium heat, stirring frequently, until the cheese is melted and the mixture is hot. Serve immediately.

How to Make Rotel Dip in a Slow Cooker

Cooking Rotel Dip in the slow cooker or crock pot is pretty much the same process. The difference being, after you brown the sausage, combine all of the ingredients in your crock pot, and cook on low for 2-3 hours, until the cheese is nice and melted and the dip is hot. Then, you can bump the slow cooker over to warm to keep your dip nice and smooth for your party.

Variations and Substitutions

Velveeta – you can swap for a different style Velveeta cheese, if you like. We used the original type, but you can swap this for the queso blanco version for a fun twist.

Rotel – we usually use original or mild rotel, but for a spicier dip, feel free to swap this with the hot variety.

Meat – we used a regular pork sausage, which adds a lot of flavor to the Rotel dip, but alternatively, you could use 1 lb. ground beef, or swap for a hotter sausage variety.

How do I reheat Rotel Dip?

To reheat rotel dip that you made on the stovetop, you can use a skillet over medium-high heat or reheat it in the microwave, stirring occasionally until it is heated through.

Can I make Rotel Dip without Velveeta cheese?

I have never tried making Rotel Dip without Velveeta, so I can’t guarantee any results. While not the healthiest ingredient, the Velveeta just gives us that creamy, melty cheese that you need for this recipe.

Enjoy your Rotel dip with tortilla chips, vegetable sticks, tacos, or use it as a topping for nachos or chili.

Can I make Rotel Dip spicier?
