This grinch cookie recipe simplifies the baking process by using a cake mix box as the base, allowing you to create delightful Christmas cookies without the hassle. By adding a few drops of green food coloring to the white cake mix, you can transform these treats into adorable grinch green delights.

Grinch Cake Mix Cookies Ingredients

  • 1 box white cake mix
  • Neon green, or regular green gel food coloring
  • 2 eggs
  • ½ cup vegetable oil
  • Heart sprinkles

Directions

Step 1: Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper and set aside.

Step 2: In a large mixing bowl, mix together white cake mix, eggs, and vegetable oil, until well combined.

Step 3: Drop in several drops of food coloring, and fold into the cookie dough until well combined.

Step 4: Use a 1 inch cookie scoop to scoop out cookies and place them onto the parchment paper, at least 2 inches apart.

Step 5: Bake the cookies for 9-10 minutes, until the bottoms of the cookies begin to turn golden brown.

Step 6: Remove from the oven and allow the cookies to cool for about 5 minutes.

Step 7:Push a heart sprinkle into the middle of each cookie, and move the cookies to a wire rack to finish cooling completely.

Can I use a different cake mix flavor?

Yes! You could use any light colored cake mix- vanilla or yellow cake mix would also work well.

Do I need to chill the cookie dough?

Nope, there’s no need to chill cake mix cookie dough.

Do the grinch cookies freeze well?

They do! Once they’ve cooled completely, place them in a freezer container or storage bag, and freeze for up to 3 months. Just be sure to take them out of the freezer about two hours before you want to enjoy them.

How much food coloring do you put in the cookie dough?

If you use gel food coloring, you’ll need less. It can still take a lot of color to get the bright, vibrant color we did for these cookies. I tend to just start with a regular amount, and then keep adding as needed. Using regular food coloring, it will be really hard to get a good coloring, and you may need to add so much that it alters the cookies too much.

Why did my cookies come out flat??

Like I mentioned with the food coloring question, adding too much food coloring can affect how the cookies bake. If the cookies come out flat, there is too much moisture. If they’re too puffy and cake-like, not enough moisture. However, as long as you don’t over do it with the food coloring, these cookies should turn out perfectly.
